Drying kinetics and activation energy for solar drying of ginger slices

Drying is one of the oldest and most important preservation method for food in which by reducing water activity shelf life can be increased. In present investigation, fresh ginger was pretreated calcium oxide solution at different concentrations. Solar drying three temperature levels viz., 55, 65 75o C loading densities 0.147 g/cm2, 0.176 0.206 g/cm2 respectively were used investigation. Results study revealed that total time required solar dryer curtails with rise air increased as density The activation energy observed to 20.45 kJ mol-1, 29.06 mol-1 17.6 respectively. Also, diffusivity increase from 45 oC.
